For Galley Staff and Chief Cooks, the Catering course includes 16 cooking demonstration videos and recipes from various ethnic cuisines. The Hygiene course teaches how to safeguard food so it does not cause illness or harm.
This course covers:
- Cooking efficiently & economically and the various cooking methods
- Designing a well balanced menu
- The importance of good administration and stock control
- The importance of personal hygiene in ensuring a hygienic environment
- High risk food and how to prevent contamination of food
Interactive exercise: Match up the food items with the correct storage temperature
